Barbecue, grill, empanadas. In that order, the three most frequently mentioned words upon arriving in Argentina. But that Argentine barbecue everyone wants to experience isn't in Palermo or Puerto Madero. That barbecue is in a neighborhood house.
Welcome to experience Argentine asado like no one else will. Before the asado, we'll take a short tour: we'll walk through the neighborhood, discuss the architecture of its houses and its history, and explore hidden corners that hold a special place in its identity. On our tour, we'll visit the Mataderos meatpacking plants, pass by the Nueva Chicago soccer stadium, El CedrĂ³n pizzeria, El Resero restaurant, and other neighborhood gems. We might even pop into an old sportswear store with vintage Adidas pieces.
Before heading to the grill, we do the shopping properly. We stop at a neighborhood bakery, learn about the different types of bread, the origins of pastries, and sample thin, dry pastries perfect for an afternoon snack with mate. Then, we go to the butcher shop. There's no barbecue without meat, and a good grill master chooses it in person. We look at the cuts, understand each one, and buy according to the group's preferences.
Then comes the main event. We have a barbecue with a neighbor at their house. You learn how to light the fire, the different techniques, the timing, the best ways to salt the meat, and how to really grill it. You experience the whole ritual: the pre-barbecue chat, the snacks, the vermouth, the lit grill, and the crispy meat that goes straight to your plate.
It's not just about eating, it's about being part of it. It's an authentic, everyday, and profound experience. A real barbecue, experienced like a local, in a genuine setting, with unwritten but palpable codes.
